Our Coffee

Description

Juan Ramón’s coffee is grown without the use of synthetic fertilizers or pesticides, hand picked and sorted, and processed using the traditional technique of patio sun-drying. The arabica beans are medium sized, pleasantly aromatic bean, and really pack a punch.

Juan Ramón currently offers his coffee as a single-origin full city roast for the local market in Honduras. The bright, complex flavor of this coffee is dominated in the front end of the cup, then transcends to a smooth and pleasurable middle and ends with a bright and lingering finish. The inherent flavor of Juan Ramón’s coffee has been described as ‘lively, direct, distinct’ by tasters at COHORSIL (local cupping facility) and ‘a classic example of Honduran coffee: silky or smoothly textured with a medium body’ by local IHCAFE tasters. Honduran coffee has floral and fruity undertones that run the gamut from strawberry and apricot to soft-lemon flavors. It is a great coffee that will awaken every taste bud. The full-city roast leaves just a trace of the coffee’s natural oils on the surface of the bean and creates a smooth clean finish with balanced acidity that is appropriate for any time of day. Though traditional roasting technology does not allow maximum roast time or temperature control, the coffee we sell is roasted fresh for your order so we can offer roasts to suit your personal taste.

Café Emaus Farm

Juan Ramón’s Café Emaus coffee farm is situated 1,440 meters (4,725 feet) above sea level in the mountains outside of La Libertad, Comayagua, Honduras. It is 30 manzanas of coffee that produces an average of 500 quintals (110,230 pounds) of pre-processed coffee per year.  The farm includes many of the original trees, providing for shade grown coffee in harmony with nature. Juan Ramón's farm is certified organic by Biolatina, one of the largest organic certification programs in Central America.

Why we are not "Fair Trade" certified

Through the Emaus Foundation's Exchange For Change project, Juan Ramón receives two times the fair trade price for each pound of coffee and meets nearly all the requirements for certification by the Fair Trade Organization (FTO). Unfortunately, The FTO only certifies cooperatives and charges $2,400 for the certification. For now, we do not plan to invest in certification due to the absence of transparently managed cooperatives in the area and the prohibitive cost of the application process.
